Icing Recipie


Hello,

While we are working on an icing tutorial we have decide to share with you one of the recipies we use to for icing cupckes and cakes.

We use Chelseas Sugar's recipies which are easy and fun.

Fluffy vanilla cupcakes:

Ingredients

125g butter, room temperature 1 cup Chelsea White Sugar 1 ¼ cups self raising flour 2 eggs ½ cup milk 1 teaspoon vanilla essence Pinch of salt

Method:

1. Preheat oven to 180°C. Grease and flour a 12 x ½ cup capacity cupcake tin. 2. Place all the ingredients in a large mixing bowl and beat for ten minutes or until smooth. 3. Divide mixture between prepared cake tin and bake for 10-12 minutes or until cakes spring back to the touch. 4. Remove and transfer to a wire rack to cool.

Chocolate cupcakes:

Ingredients

150g butter 1 ½ cups Chelsea Caster Sugar 2 eggs 2 tsp vanilla extract 2½ cups self-raising flour 1¼ cups milk

Method

Beat butter in an electric mixer until smooth, add sugar and beat until light and fluffy. Add eggs and mix well. Add the vanilla, flour and milk. Beat until smooth. Place individual paper baking cups in a cupcake tin, spoon in mixture until they are about 2/3 full - you should get 24 cupcakes (don't overfill as they will 'peak'). Bake in the oven at 190°C for 20 minutes or until golden. While cupcakes are cooling on a wire rack, prepare icing.
